This has led us to specialize in this sector, producing one of the best olive oils on the market.

According to EU Regulation 432/2012 currently in force, "The polyphenols in olive oil contribute to the protection of blood lipids from oxidative stress. The beneficial effect is obtained with a daily intake of 20 g of olive oil." This statement may only be used for olive oil containing at least 5 mg of hydroxytyrosol and its derivatives (oleuropein and tyrosol complex) per 20 g of olive oil. Our oil has values above 15 mg of hydroxytyrosol and its derivatives (per 20 g), which is 250% higher than any high-end gourmet oil and similar production processes.

Our production comes from high mountain olive groves (between 700 and 900 meters) of the Picual variety in the province of Jaén. These areas are highly prized for their zero pollution levels, with the vast majority of days being sunny and with occasional rainfall. This hydrological stress triggers a natural defense mechanism in the olive tree, which consists of generating more polyphenols. This intrinsically provides very high oxidative stability, resulting in a very stable oil that maintains its optimal consumption properties for over 30 months.

Oleum (oil in Latin) was a highly valued foodstuff for Roman civilization, and the most prized variety was known as “oleum hispanicum,” which came from Hispania. The Romans chose the Jaén region from among their vast empire as the area with the best conditions in terms of latitude, light, soil, temperatures, and humidity. After more than two thousand years of evolution in the area, the provinces of Jaén, Granada, and Córdoba have become world leaders in production, awards, and recognition.

Merino oil is the result of an exclusive selection made in October on our fields located between Martos, Villares, and Valdepeñas de Jaén. The Picual mountain olive grove has exceptional oligopeptide properties, with a very high level of polyphenols that provide powerful antioxidant properties, benefits in regulating blood cholesterol levels, as well as anti-inflammatory and blood sugar regulating characteristics.

We specialize in the production of Early Harvest EVOO, due to its unique qualities, enhanced flavor, and green color that adds a special touch to any dish. Cold extraction, mechanical pressing, and harvesting and selection when the fruit is still growing and ripening give us a distinctive oil that is highly prized by the most discerning chefs. We have a museum dedicated to oil where customers can enjoy an experience that ranges from tasting to advanced knowledge of nutritional and health properties.
